Auntie Eli’s Tuesday Treat: Cinnamon Buns!

Cinnamon Buns

This recipe makes 12 large buns.

Preheat the oven to 350ºF.

Ingredients

  • Dough
  • 1 cup milk
  • 50 gr. butter
  • 3 1/2 cups flour
  • 1/2 cup sugar
  • 1 egg
  • 15 gr. fresh yeast or 5 gr. instant yeast
  • 1/2 tsp. salt

Filling

  • 100 gr. butter softened
  • 2 cups soft brown sugar
  • 5 tbsp. cinnamon

Topping 

  • 100 gr. butter
  • 100 gr. cream cheese
  • 1 cup icing sugar

Method

First, make the topping by whisking the ingredients together until smooth. Put in the fridge until needed. Start the dough by melting together the milk with butter on low heat. In a separate bowl add 1 1/2 cups of the flour with the sugar, egg, yeast and salt. Whisk until well combined. 

Gradually add the milk mixture into the flour mixture. For this next step you will need the hook attachment. If you are kneading the dough, use the folding method. Gradually add the remaining 2 cups of flour until the dough forms. Continue kneading it for 2 minutes on a floured surface and place it in a well-greased bowl. Cover the bowl and set it aside in a warm area for 30 minutes until almost double in size. Remove from bowl on a floured surface and roll out into a large. 

Spread the softened butter all over the dough. In a bowl mix together the sugar with the cinnamon and spread over the butter. Now here’s the tricky part. With both hands, grab the sides of the dough furthest from you and start to roll it inwards towards you. After every roll, stretch the dough upwards and roll again. Continue this movement until you come to the end. Pinch the ends together to secure your roll. You should have long, thick roll. Cut into 12 even pieces. Place the buns on a tray spaced out, swirl side up. Cover with a kitchen towel or plastic wrap and set aside for 30 minutes. Bake in a preheated oven for 20-25 minutes until golden brown. While still hot, drizzle a tablespoon of the topping on each bun. These are best served fresh!  

Tips 

  • Fresh yeast makes all the difference with these buns! 
  • All ingredients should be room temp.
  • Have your space cleaned and ready to go.
