Astoria’s newest baking venture is bringing a small-batch approach to the neighborhood with Fiolicchia Bakery. Created by professional bakers Sofia and Roberto, the tiny microbakery focuses on handcrafted baked goods made with carefully selected ingredients and plenty of attention to detail. Operating as a home-based bakery, Fiolicchia currently takes orders online and offers local pickup and delivery in Queens.

The bakery’s focaccia is made with organic flour, Italian semolina, imported Italian extra virgin olive oil, and carefully selected ingredients. The dough is 80 percent hydration, made with a biga preferment, and undergoes approximately 48 hours of fermentation. Customers can choose from four regular focaccia flavors, along with a rotating Focaccia of the Month featuring seasonal ingredients. Fiolicchia also makes modern fruit tarts and has begun introducing additional baked goods, including bomboloni. With an emphasis on quality, creativity, and small-batch baking, Fiolicchia Bakery is giving Astoria food lovers another reason to seek out something special.
