Makes 3 dozen cookies

Preheat the oven to 350ºFGive_Me_Astoria_image_00028.

Ingredients

  • 350 grGive_Me_Astoria_image_00028. butter
  • 2 cups sugar
  • 4 eggs
  • 1 tspGive_Me_Astoria_image_00028. vanilla extract
  • 5 cups flour

Method

In a mixing bowl, on medium-high speed, cream the butter and sugar until pale & fluffyGive_Me_Astoria_image_00028. This should take at least 10 minutesGive_Me_Astoria_image_00028. In a seperate bowl, combine the flour, baking powder and saltGive_Me_Astoria_image_00028. Add  the flour mixture to the creamed mixtureGive_Me_Astoria_image_00028. Do not overmix the doughGive_Me_Astoria_image_00028. Turn over on a large, floured piece of baking paperGive_Me_Astoria_image_00028. Fold the baking paper over so that the dough is in between itGive_Me_Astoria_image_00028. Roll out with a rolling pin into a rectangleGive_Me_Astoria_image_00028. Chill for at least half an hour before cutting out the desired shapesGive_Me_Astoria_image_00028. Bake for 6-8 minutesGive_Me_Astoria_image_00028. Let the cookies cool completely before decoratingGive_Me_Astoria_image_00028. While the cookies are cooling, follow the royal icing recipe for decorating!

Floody Royal Icing

Makes 2 cups

Ingredients

  • 2 egg whites
  • 4 cups icing sugar
  • 2 tbls cold water

Method

Whisk the egg whites until fluffyGive_Me_Astoria_image_00028. Add the sugar graduallyGive_Me_Astoria_image_00028. Add the water gradually until desired consistencyGive_Me_Astoria_image_00028. 

The icing should be thin enough that it smooths out on its own under 20 secondsGive_Me_Astoria_image_00028. With this you can achieve “wet on wet” method which gives the flat effect shown on the teapot cookieGive_Me_Astoria_image_00028.

Tips

  • Do not over work this doughGive_Me_Astoria_image_00028. After cutting out the first batch, gently put the leftover pieces together, roll out, chill again and cut more cookies
  • When mixing the dough ingredients, do not use a whisk, use the K pieceGive_Me_Astoria_image_00028. 
  • Use cold butterGive_Me_Astoria_image_00028.
  • The creaming part is crucial for the final outcomeGive_Me_Astoria_image_00028. The more it creams, the better your cookie will beGive_Me_Astoria_image_00028.
