Auntie Eli’s Tuesday Treat: Homemade Cheesecake!

Baked Cheesecake

Preheat the oven to 425ºF

Makes an 8inch cake

Ingredients

  • 450 gr. cream cheese
  • 3/4 cup sugar
  • 3 eggs
  • 1/2 cup cream
  • 1/2 cup yogurt
  • 1 tsp. vanilla extract or lemon juice
  • 1 tbsp. flour

For base (optional)

  • 1 cup crushed biscuits
  • 1/4 cup sugar
  • 4 tbsp. melted butter

Method

Beat the cream cheese on medium speed scraping the edges frequently. Add the sugar and beat until fully combined. Keep the speed medium in order to prevent the air from escaping the batter. This will assure you a creamy and fluffy result. Add the eggs one at a time scraping the sides after each addition. Add the cream, yogurt, vanilla and flour. Make sure the sides are scraped well. Allow mixing for an additional 3 minutes. In this time, prepare your base by mixing together all the ingredients. Grease the baking tray well. This will keep your cheesecake from cracking. Place the biscuit in the tin and pat it down well until the base is fully covered. Sieve the batter through to get rid of any lumps. Pour into desired tin. Lower the oven to 275ºF. Bake for 1 hour. Turn the oven off but do not open the oven door for an additional hour. Chill over night before serving.

Tips

For a berry variation, leave 1/2 a cup of batter behind and mix in 1 cup of desired berries. Drop the mixture a tablespoon at a time on the top of the cake. Take a knife and with a swirling motion spread the berries. Bake the same way.  You can do this with other fruit, chocolate, toffee etc. This recipe should be followed exact for best results!
